A Trip to the Farmer’s Market

DSC_0401Every week Andrew and I say we are going to visit the Farmer’s Market on Sunday morning. The weekend arrives and we get caught up with work, housework and running errands and never make it. This past weekend we were determined to go and it seemed like the perfect day for it. DSC_0406DSC_0397We were both pleasantly surprised by the number of purveyors and booths that lined the streets with so many wonderful products and selections. Beautiful flowers, amazing selections of produce and fresh herbs, and a variety of canned goods, breads and other pastries.DSC_0400DSC_0399We were so happy to have finally taken the time to visit and a little disappointed that we hadn’t stopped by earlier in the summer. While we were walking around and admiring all of the stands we picked up a few eggplants and some fresh baked focaccia bread to make Eggplant Parmesan later that night.DSC_0402DSC_0412It was the perfect morning for walking around and exploring the market. As always in Nebraska the weather was a bit unpredictable. The morning started out cool and cloudy, but eventually it started to warm up as the sun came out. As we were leaving the house Andrew told me I looked like a farmer, but once it got warmer out I was happy to have my little sunhatDSC_0413DSC_0414We spent the rest of the afternoon relaxing until we started on dinner-the Eggplant Parmesan turned out perfectly! How amazing does this look?? After discovering just how much the market had to offer we already made plans to come back the next weekend we are in town to stock up on some of the amazing products we came across!
